This Espresso Crusted Filet Mignon recipe is delicious. You can also use this Espresso Rub for any other cuts of steaks, not just filet mignons.

My favorite way to cook a filet as you get in fine restaurants is to cook it on the stove and finish it in the oven. If you cook your filets like this once, you will never put a steak on the grill again. Save your grill for the BBQ and hamburgers! I promise you, it is the most delicious and best way to cook a steak. Cook this for your family or friends, and they will be so impressed!

This espresso rub gives the steak a wonderful crust, and you can also use it on any cut of steak you like.
When I mix up my rub, I throw all the ingredients in a container with a lid and shake it well. I like to triple this recipe and keep it on hand because I use it often.

Sprinkle both sides of the filet with the rub and rub in well.

I like to use a cast-iron skillet. Get your pan screaming hot. Pour in a little olive oil. Give the oil a few seconds to get hot, and place your fillet on top of the oil. Do not touch it! You want it to sit long enough to form a crust. After about 2 or 3 minutes, flip it and let the other side crust.

Sear the steak on the sides to brown also.

Transfer to a 425-degree oven to finish cooking. I like my filets medium-rare. I cook mine until it reaches 135 degrees which take about 8 minutes. When I first started cooking steaks this way, I would use a thermometer to make sure I didn’t overcook the meat. Let the steak rest for 5 minutes before slicing.  If you cook it medium rare it will be extremely tender with a lot of flavors. You can see from the photo at the top how juicy it is.  You can cook it medium if medium-rare is too pink for you and it is still very good.
As soon as it comes out of the oven, place butter on top. I love to use compound butter on top of my steaks. My favorite is blue cheese butter. It is very easy to make. You can google compound butter for steaks and find some interesting recipes, so find one you like. It will take your steak up another level.
Espresso Steak Rub

1/4 cup espresso

1/4 cup chili powder
1 Tablespoon coriander
1 Tablespoon oregano
1 Tablespoon kosher salt
1 Tablespoon pepper
Mix all ingredients well.

Blue Cheese Compound Butter
8 ounces butter,
4 ounces (1/2 cup) blue cheese
1 shallot
Let butter get soft. Mix all ingredients. Form into a log and wrap with plastic wrap. Place in freezer for a couple of hours. Take out and place in refrigerator until ready to use.
