Easy Refrigerator Pickle Recipe

  • 2 pounds medium size cucumbers, sliced
  • 1 or 2 white onion, thinly sliced
  • 2 tablespoons salt The salt is for soaking the cucumbers
  • 1 and 1/2 cups sugar
  • 2 cups white wine vinegar I have used regular white vinegar and it works well also.


  1. Combine the cucumbers, onions, and salt.

  2. Cover and refrigerate for 3 hours, stirring often.

  3. In a small saucepot, dissolve the sugar in the vinegar over medium heat. Allow mixture to cool.

  4. Drain the cucumbers and onions and rinse.

  5. Combine the vinegar mixture with the cucumbers and onions. Pour into jars. Store in the refrigerator.
