Spinach and Artichoke Cups

This recipe for Spinach and Artichoke Cups is a perfect appetizer for your next party or event. This dish will get wonderful compliments and is perfect because it is a one or two-bite appetizer.

My favorite appetizer to serve is store-bought mini fillo cups and filled with chicken salad. I want to change up from my go-to chicken salad cups and create a new appetizer. Usually, I serve my favorite spinach dip so I thought that the spinach dip would be perfect in the store-bought mini fillo cups. Appetizers that you can eat with your fingers and that you can eat in one or two bites are ideal for parties. Plus, everyone loves spinach and artichoke together.

The great thing about this recipe is that it is so quick and easy to prepare. When I entertain, I usually have many recipes to prepare. This one is so quick and easy so it only takes a few minutes of my time.

Ingredients

Fresh Spinach

Artichoke Hearts

Cream Cheese

Sour Cream

Mayonnaise

Parmesan Cheese

Paprika

Salt

Fillo Cups

 

I have a couple of spinach dip recipes that I use usually depending on the ingredients that I have on hand.  I have to use one of my recipes that can be baked but do not require baking for more than 8 minutes.  This recipe works perfectly for these fillo cups.

Store bought and pre-packaged fillo cups are made with Phyllo dough. These are great because of their convenience.

I like to use fresh spinach in this recipe. These cups can be made with reduced calorie cream cheese, sour cream, and mayonnaise.

Spinach and Artichoke Cups

Course Appetizer
Servings 24

Ingredients

  • 1 1/2 cups fresh spinach, cut into 1/2 inch strips
  • 1 14 oz can of artichoke hearts, drained and chopped
  • 1 8 oz pkg cream cheese
  • 2 tbsp sour cream
  • 2 tbsp mayonnaise
  • 1/2 cup Parmesan cheese, shredded plus a little for garnish
  • 1 clove garlic, minced
  • 1/4 tsp paprika
  • 1/2 tsp salt
  • 2 12 count pkg mini fillo dough cups

Instructions

  1. Saute spinach and garlic in olive oil for one minute or until spinach is wilted.

  2. Mix cream cheese, sour cream, mayonnaise, salt, and paprika in a bowl.

  3. Add garlic and spinach and mix well.

  4. Spoon into cups. Sprinkle the tops with a little Parmesan cheese and bake at 350 for 8 minutes or until cheese is melted.

Saute spinach and garlic in olive oil for about one minute or until spinach is wilted.
Mix cream cheese, sour cream, mayonnaise, Parmesan, salt, and paprika in a bowl.  Add garlic and spinach and mix well.

Fill fillo cups with spinach mixture, top with Parmesan cheese. Bake in a 350 degree oven for 8 minutes or until cheese melts.
