When I realize that I am having guest over for lunch, chicken salad is the first thing that pops in my mind.  This recipe for chicken salad is different from the grape and pecan chicken salad that is served often, and it is perfect for a summertime lunch.  The secret ingredient is orange zest!  Do not omit this ingredient, please for the love, don’t!   The citrus zest freshens up the flavor of this chicken salad.  Everyone loves it.

I like to have a few bags of chicken that I have cooked and shredded on hand in the freezer.  I even freeze a small bag so that I can make a serving just for me anytime I want to make lunch fast.  

I zest my citrus fruit with a microplane. I think it is a must have in the kitchen.  Also when you make chicken salad, you can change the amounts of the ingredients however you desire.  You can shred your chicken or chop your chicken. When I am trying to cut back my calories, I always use greek yogurt.  I can’t tell a whole lot of difference in the taste or texture. Some people will half the mayo amount with half greek yogurt. 

Be prepared to get compliments on you chicken salad!

      I use dried cranberries. I usually buy Craisins. I hope you enjoy the recipe!
